A couple of weeks ago I invited my neighbor (friend) over for breakfast. I was very excited about sharing with her just one of the many dishes that I’ve conjured up that is low in fat and full of flavor. I’m calling this one; Egg Delight. I love this breakfast, it’s quick, easy and so delicious! I prefer this for breakfast, but you can eat it anytime of the day.
Ingredients: (for 2)
Eggs (2)
Mushrooms (as much as you desire)
Onions (as much as you desire)
Spinach (2 cups)
Olive Oil (tablespoon)
Turkey Bacon (2 strips)
Microwave 2 strips of turkey bacon, crumble the bacon after cooking and set aside. Beat eggs in a bowl and add salt and pepper to taste. With about a tablespoon of olive oil in a heated pan, put in as much onions and mushrooms you desire ( I use about 1/2 cup ). After the onions have soften, put in the spinach and cook it until it’s withered. Pour eggs in the pan and add the crumbled bacon. Stir, but not much, just enough to mix the ingredients together; let it cook long enough to adhere together, flip it until it’s done (don’t make scramble eggs). Once it’s done you can pan toast your bread or use it straight from the package. This is enough to make 2 sandwiches. Serve with sliced tomatoes and fruit of choice…mmmm so good!
The spinach used in this recipe came from my garden. It was really fresh, I picked the spinach that morning! I recommend that you go to your local farmers market if you don’t have a garden. Tomorrow I will share more about my garden and about some of the veggies I started from seeds.
