There is nothing more refreshing on a hot and humid day then to have a fresh cucumber salad, it’s so easy and quick to make. I made my first salad today using two cucumbers from my garden…yummy. I used in this salad cucumbers, red onions, cherry tomatoes and flavored with whatever dressing you like, so simple and so good.
Cucumbers are fast growers, they literally mature overnight. Every day I need to keep an eye on the cucumbers, because if I don’t they will get to big and lose its flavor. Last year we planted cucumbers and I couldn’t pick them fast enough. I made pickles and pickle relish. This year I know that I will be pickling pickles all summer.
