There are times when I just don’t want to eat any meat. Yesterday was that day and so I decided to make an avocado sandwich and it was so yummy! This is so very simple to make; and for those of you who are on, “I gotta lose some weight”. This is the perfect sandwich for you minus all the unhealthy fats.
- 2 slices of 100% whole wheat
- small onion
- teaspoon of olive oil
- half of avocado
- 3 slices of tomatoes
- salt and pepper to taste
- 1/4 of a slice of cheddar cheese
Saute a small onion with about a teaspoon of olive oil. After the onions are wilted and a little caramelized , take them out and put aside. Take one slice of your whole wheat bread and put in skillet on medium heat, place on top of bread onions, avocado and tomatoes season with salt and pepper , and then add about 1/4 slice of cheddar cheese. Place the second slice of bread on top and turn over, cook both sides until golden brown…mmmmm good, now that was easy! Hope you enjoy!
