It’s funny how when you get older, your taste buds change. When I was younger, I hated any kind of cake or bread with nuts or chocolate in it (and I hated banana bread too); but as I’ve aged you can add plenty of nuts, chocolate chips….love it! Yesterday as the weather was getting cold here, I wanted to do some baking. I had some bananas that were not fit for nothing but baking banana bread and so that’s what I did. I added plenty of chocolate chips and walnuts. The recipe is so easy and fast. So, if you love banana bread, give it a try…delicious!
heat oven at 350
Ingredients:
4 ripe bananas
1/3 cup melted unsalted butter
3/4 cup packed brown sugar
1 egg beaten
1 teaspoon vanilla extract
1 teaspoon baking soda
1 1/2 cup flour
pinch of salt
1/2 cup of semi-sweet chocolate (optional)
1/2 cup of chopped nuts of your choice (optional)
bake for 1 hour
smash bananas with a fork, leave some chucks
add packed brown sugar, beaten egg, vanilla extract and melted butter
add flour, salt, baking soda and optional ingredients if desire
pour mix in bread pan
I was so anxious to taste this, I took it out before it cooled and it broke…so don’t try this at home ***smile***
